What kinds of karahi will you be offered?
Karahi is meat cooked fast and hot in a wok-shaped iron pan, with tomato, ginger, garlic and green chilli, until the sauce clings to the meat and the fat separates at the edges. In Lahore you will meet four main kinds.
- Chicken karahi. The everyday order, quickest to cook and cheapest. Usually made with broiler chicken.
- Desi murgh karahi. Made with free-range desi chicken, tougher and more flavourful, slower to cook and dearer.
- Mutton karahi. Goat, cooked in ghee or butter, richer and slower than chicken. The dish Lahore's karahi houses are judged by.
- Dumba karahi. Fat-tailed sheep, cooked Peshawari or Shinwari style with little more than salt, tomato and its own fat. The plainest and, to its fans, the best. Our guide to Shinwari karahi in Peshawar explains the style at its source.
A Lahori karahi tends to be richer and more heavily spiced than the Shinwari version, and the city's best-known houses make a point of cooking in desi ghee or butter.
Where is the best karahi in Lahore?
Butt Karahi, Lakshmi Chowk
Butt Karahi is in the Gita Bhavan building at Lakshmi Chowk on McLeod Road, and for decades it has been the karahi house Lahoris send visitors to. Its chicken and mutton karahi are cooked in pure desi ghee, and its signatures are the desi murgh karahi, mutton karahi and chicken butter karahi. You can choose your meat and watch it being cut before it goes into the pan.
Listings give its hours as about 11 am to 3 am every day. It is busiest after 9 pm, and at weekends the junction outside is jammed. Expect a wait while your karahi cooks; that is a good sign, not a bad one.
The name is famous enough that other shops trade on it. Delivery apps list outlets calling themselves the qadeem (old) or asli (real) Butt Karahi of Lakshmi Chowk. If you want the original, go to the Gita Bhavan building at the chowk itself. Our Lakshmi Chowk food guide covers the rest of the junction.
Ghani Shinwari, General Truck Stand
Ghani Shinwari is at the General Truck Stand on Ravi Road, in the Qila Lachman Singh and Badami Bagh area north of the walled city, and people cross Lahore for its dumba karahi, along with roash (Shinwari boiled meat), mutton chops and dum pukht. This is truckers' food in a truckers' setting: plain, basic and serious about meat.
Its dumba karahi takes around two and a half hours to cook, so ring ahead and order before you set out. Food guides also name Ilyas Dumba Karahi for the same style.
Haveli and Andaaz, Fort Road Food Street
On Fort Road, facing Badshahi Mosque, Haveli and Andaaz both serve a desi murgh karahi that is popular in its own right, and their rooftops look across to the mosque and the fort. You pay for the view, and the karahi is more polished than at Lakshmi Chowk. It is the best choice for a family dinner or for guests from out of town. See our Fort Road Food Street guide.
Khan Baba, Lower Mall
Khan Baba, on the Lower Mall side of the city near Sanda, cooks in desi ghee and is known for mutton karahi, mutton chops, qeema naan and zarda. Food guides put it at the upper end of the price range. It suits a large group that wants a proper sit-down meal.
Gulberg: Salt'n Pepper Village and Ziafat
In Gulberg, Salt'n Pepper Village on MM Alam Road and Ziafat on College Road are comfortable sit-down restaurants with karahi on a wider desi menu; Ziafat is known for its mutton karahi alongside biryani and BBQ. They lack the drama of Lakshmi Chowk but are easy with children and older parents.
How is karahi priced in Lahore?
Karahi in Lahore is sold by weight, usually per kilo or half kilo, and the rate depends on the meat: chicken is the cheapest, desi murgh and mutton cost much more, and dumba is the dearest. Rates move with meat prices and change often, and the figures you will find on older food blogs are now well below what you will pay. Ask the per-kilo rate before you order and check whether naan, salad and raita are extra.
As a guide to quantity, ask the cook how much your group needs; most karahi houses are used to the question. It is better to order a little less and add naan than to leave half a pan.
How do you order karahi?
- Decide the meat, and at Butt Karahi pick your cut.
- Choose the weight, half a kilo or a kilo, according to your group.
- Say how hot you want it. Most houses will make it milder or spicier on request.
- Order naan or roti in rounds from the tandoor as you eat, so it stays hot.
- Add raita and salad, which cut the richness.
- Wait. Chicken is the quickest, mutton and desi murgh take longer, and dumba karahi at Ghani Shinwari takes around two and a half hours.
When is the best time to go?
Karahi is an evening dish in Lahore. The karahi houses fill up after dark, and Lakshmi Chowk runs until the small hours, which suits a late dinner after a day in the old city. Weekends and the nights after Eid are the most crowded. In winter, a karahi on a cold evening is the classic Lahori dinner; in high summer, the open kitchens are very hot, so a seated, air-conditioned restaurant may be more comfortable.
Parking is difficult at Lakshmi Chowk and on Fort Road. Take a rickshaw or ride-hailing car, or park near Mall Road and walk in.
Which karahi house should you choose?
- Want the classic, and do not mind noise and crowds: Butt Karahi, Lakshmi Chowk.
- Want the best meat, and can plan ahead: dumba karahi at Ghani Shinwari, ordered in advance.
- Family dinner with a view: Haveli or Andaaz on Fort Road.
- Comfort and air conditioning: Salt'n Pepper Village, Ziafat or Khan Baba.
