What is a bun kabab?

A bun kabab is a patty of minced beef or mutton with ground lentils and spices, bound with an egg batter and shallow-fried. It goes into a grilled bun with onions and tamarind or mint chutney, and often raita. Locals also call it "anday wala burger" because of the egg.

Patties are also made with chicken, potato or lentils, and beef with egg is the most common at street stalls. Vendors vary the spice, the chutney and how much butter goes on the bun, which is why everyone has a favourite.

Burns Road. The old food street is the classic destination, with stalls and small shops making them all evening.   • Standard beef or mutton patty, the classic, with onion and chutney.
  • With extra egg, which gives the sandwich its second name.

  1. Watch the stall for a minute. High turnover means fresh patties.
  2. Ask for it hot, straight from the tawa.
  3. Say if you don't want chutney or onions, or want less spice.
  4. Carry small notes and eat standing, as most stalls have little seating.
